We have had large outwell dome and tunnel tents but for the last few years we have used a trailer tent
We now want to buy a new tent. I cannot bear the thought of sweating in a plastic bag again so have been thinking canvas
We don't have a trailer so it would need to fit in a car. We need it for 2 adults and a 10 year old
I love the look of bell tents but we are quite messy and I'm not sure how we would arrange it
I would be grateful for any recommendations

Depending on your budget this could work great for you, its not 100% cotton but polycotton so it's going to be cooler in the day and warmer in the eve. Will sleep the 3 of you comfortably as well, plus the only poles your working with is the canopy section at the front so nice and simple to put this up and take down again too.

What kind of budget are you on? Poly cotton may be a good compromise as it is breathable but less bulky than pure cotton canvas. If there are three of you and you are "messy" then that means you need about a fire berth tent if you have lots of stuff. A 5 berth poly cotton tent is going to still be fairly bulky, about 40 kg.
on searching I found this
Newer airbeam tents thicker denier so easy to pitch last longer. The edorus is a nice range and do a sky liner for it to protect from u.v rays think its being sold at winfields
Another reccomendation not to begin looking at quality Dutch pyramid tents ... Unless you love camping and look after gear with love and care and enjoy adjusting guy lines so you have peace of mind in almost all conditions , year round camping from snow to baking temps , and intend to buy a tent that with care will last a lifetime and then some .
