Sounds like an inflatable tent would be the sort of thing you are looking for. Most can be inflated in a round 10 mins.
Most of the main manufactures make them so you won't be spoilt for choice. And a lot of the big retailers are starting to get displays up so you should be able to find one to see, which I think is important.
Worth noting that the bigger tents (and the polycotton ones especiallly) can have very big pack sizes - upwards of 50kg and large bags.
For some suggestions, give us an idea of budget and what sort of trips do you have in mind?
Re the beds, maybe consider a camp bed rather than an air bed.
Inflatable tents do indeed go up quickly...but can be very heavy to lift. And can take up more room.
If you want lighter lifting and easy putting up, tunnel tents with fibre poles are good and old standards like the Vango Icarus / Iris remain a good deal (cheaper than airbeam tents).
3 people, right? How old is your son - do you want separate sleeping compartments?
How do you feel about canvas / cotton? Lovely feel, heavier tents, harder to manage if you have to pack up wet. (and dry once you get home). Bell tents are lovely inside, and you can get the inner sleeping compartments.
Have you read the section on Sewn in Groundsheets? etc?
Will you be doing weekend camping or week long holidays?

I agree that blow up beds can be uncomfortable (though this is personal preference), cold...and deflate at the wrong times. Thick SIMs are more costly, but Vango do a 10cm that is more affordable. Maybe you would like a SIM (or other thick foam mattress) on a camp bed?
My kids are fine on the thicker Decathlon roll up mat, the one with the foil on the back which adds insulation, if you can't afford SIMs all round.
