A narrow but tall tent could be unstable in the wind and require thicker poles for stability which compromises how much they can bend as so limits how compact then can be.
From what I've seen stand up tents tend to be 3-4 berth minimum, however some are not all that big as they contain a sleeping area only so no extra porch just a squeeze for 3-4 sleeping bags.
Given most motorbikes can take a pillion at 80 Kg + I'm going to assume that weight is not a critical factor
No idea on the pack size, but around 12kg is manageable if the pack size can be accommodated. A two man would be a little narrower, however it would have a minimal different in weight as most of the poles and fabric relate to the height so just easier for most companies to make 3-4 tents.
Likely the best option remains scrabbling around on the ground
Nearest I can think of to your needs is an Outwell Birdland 3-man. 75cm wide pack size and weighs 16kg.But you can stand up straight while you squeeze into those wet leathers Have you looked at the smaller bell-tents or tipi style tents..these could work for you as long as the pole shrinks down enough.

Does it need to be standing height throughout? Vango’s Galaxy 200 or 300 might work, or the Vaude Chapel L-XT 3P. Outwell’s Vigor 3 is a similar layout.
Personally I would choose the Gelert Navajo 4 as suggested above. I just bought the Navajo 6 a giant bell tent and am very happy with quality for the price.

I have a Vango Nemesis 300 and a Vango gear store which goes on the front which gives me standing height. It looks like a Galaxy 300 when all together but gives me the option of just the tent or tent with front gear store.
The Vango gear store can fit most Vango 2-3 berth tents of a tunnel design like the Nemesis, Tempest etc.
The tent is not too big in its bag or could be split, the gears store is quite small.
Ihere is another type of Vango gear store which is much smaller and more suited to the likes of the Banshee which would be no good for the OP.
I bought both for just under £170 at the start of the year, a bit more expensive now the summer camping season is here.

I have a Kampa Bude 2 which sounds like it would fit your description. I've found it to be pretty stable, I think the third pole on the front of the dome probably helps. It's very comfortable for one person. There's not a big living space, but there's just enough to put your chair inside if it's raining and you can stand up to get dressed. I think it's discontinued now but you may still be able to get one or get one second hand if you like the look of it. The Outwell Arizona L looks to be similar but just a little bit bigger - not sure whether it's too big for you.
