I'm going camping in September for a week in Cornwall with my partner and our son so looking to buy a decent tent. £500 is my budget for buying a family inflatable tent. Which one out of these two would be better and is there better ones out there for my budget?
I haven't looked at either but Halfords really ?
if it were me I would go to a local independent dealer, there you should get excellent advice from people with real knowledge, who will be grateful of the business and treat you well, not just take your money and fob you off

I'd never dream of spending £500 on a Halfords tent.
Of the two you've mentioned, Quechua (Decathlon) is by far the better tent and their after sales and warranty are dependable. When camping in France, the vast majority of tents are Quechua. I'd trust it equally - if not more than - the likes of Vango and Outwell (Halfords are generally considered starter / budget tents).
As per advice already given; best go look at some on display if you can, and get a better feel for what'll suit you best and which you prefer.
