I've acquired a Cadiz 5 in very good condition; Although I have the pitching instructions, I'm not sure how this is best packed down to fit in the two saddlebag compartments.
I've had a few of the smaller Eurohike dome tents but they pack down to one bag and it was obvious how to roll it all up. This tent is so much bigger, and with the inner/outer being packed separately, I can't see how to best fold them for a neat fit in the bag. Any words of wisdom out there?

It's a similar shape tent to mine. I part zip up all doors, remove all the poles and unpeg. Fold one long edge to the middle and make sure the width of the folded part is smaller than the width of the bag it is to go in. Repeat for the other long edge. Fold first long edge over the second to leave me with a long, puffy sort of tube. Double check that this tube is still shorter than the width of the bag and make adjustments as needed. Starting at the back I start rolling it up, squashing any air out as I go. Leaving it stood on it's "loose end" I turn it's carrier bag upside down and plop it over the top. Turn the whole bag the right way up and kneel on it to squash any remaining air out, pop the poles and pegs in then zip it up.
I leave my tent inner in but would follow a similar folding principle for that if I wanted to pack it separately.
The first time I did it I spent quite a bit of time getting the folds right so the puffy tube was slightly shorter than the width of the bag but it does become second nature with practice.

Thanks for that. That's what I do with the smaller Eurohike 300; it has a single bag to go in to.
The Cadiz packs in to a 'saddlebag'; there are 'pillow' shaped compartments for the inner and outer to be packed in to separately (with another section for the poles etc), and, ideally, they should be rectangular rather than cylindrically packed. I wish I'd paid more attention when unpacking it, but it was a tad breezy!
I've just had a look at the "saddlebag" the Cadiz 5 comes in to see what you meant and I would still use the same principal to pack the tent away (apart from I'd remove the bedroom inner). If I was feeling really energetic I'd maybe roll it first to get the air out then unroll it and fold it to size then try to shimmy the saddlebag around the tent. I'd pack the main tent first as the bedroom inner is much softer, smaller and easier to fold and manhandle into a saddlebag.
It might just be a case of experimenting to find which way you find easiest.
Either that or I'd just buy a cheap sports holdall and do away with the saddlebag style bag
