We have a ground sheet and a carpet in the tent but do you put anything underneath the air beds to help with the damp and cold from the ground?

Carpet is fine, but Air beds have no inherent insulation. Use some insulation, whether a foil sheet, blanket or a SIM on the top of the air bed. To put a foil sheet on the ground will do next to nothing.
Better still, forget the airbed and use a quality sim?

To create insulation between the air bed and the ground you could use a layer of cardboard, or the interlocking foam mats sold in Halfords as workshop mats, or the coloured children’s foam mats.

Or else put foam yoga-type mats on top of the air bed.
