I remember reading on the Honda Website about a guy from Liverpool who toured the South of Ireland on his Honda.

He had his girlfriend with him and all their camping gear and they spent two weeks camping their way right around the coast.

And the bike they used?

That was a Honda 50cc!!!!!!!!

You should have no problems.

Anything thats good for backpacking will be good for biking.   Tent imho should have a flysheet - single skin numbers suffer from condensation.
A modern 4 season sleeping bags can be rolled up to almost shoebox size, inflatable matress next to no weight or size.
Cooking via the previously mentioned Trangia (meths or gas) will more than suffice.

Then there's a change of clothes(?) and personal effects.

I'd be in for a set of throwovers and a tankbag as well as a stuff sack (hi-gear from Go Outdoors)
Been doing it this way for 30 years now (on and off) - does for me

If your on the Wirral, get yourself down that A55. There's some really really cool rough camping (not on a camp site) to do in the Snowdonia area.
