Anything thats good for backpacking will be good for biking. Tent imho should have a flysheet - single skin numbers suffer from condensation. A modern 4 season sleeping bags can be rolled up to almost shoebox size, inflatable matress next to no weight or size. Cooking via the previously mentioned Trangia (meths or gas) will more than suffice.
Then there's a change of clothes(?) and personal effects.
I'd be in for a set of throwovers and a tankbag as well as a stuff sack (hi-gear from Go Outdoors) Been doing it this way for 30 years now (on and off) - does for me
