Because they lose money, the site I used to help out on a few years ago used to let people book in advance free of charge, this soon changed when people just didn't turn up and cost the site money through lost bookings.

During the Pandemic they again reversed this as it was costing them far too much in admin to keep returning deposits or moving bookings so have decided to not do advanced bookings until things settle down, I assume this cost them as in July last year they were booked up until August this year and have constantly been refunding deposits falling in the lock down period on those bookings.

There's a really nice site up here in North Norfolk, they don't take bookings. If we meet with friends from away there we ring and ask if they are busy before we travel. I assumed they don't take bookings because it would need administrating.

If the former then I have never booked a campsite in 40 years
