The opposite point to the one you make however, is that some people might not want to get up at the crack of dawn to be away as early as 10am.
With us it tends to depend on how far we are travelling. If we have a long drive ahead of us we tend to leave for home earlier, but if we only have say an hour's drive, we tend to stay as long as possible. Provided they are not too booked up with incomers, the C&CC will usually let you leave much later than 12:00, so you can enjoy most of the last day before leaving. We tend to avoid peak times anyway.
Quite often these days, and especially in the summer, I pack up and go home the evening before. My reasoning is that I can't see the point in spending another night in a tent just to get up at the crack of dawn, as you say, and pack away a tent that may be damp with dew. However, I am mostly up by about 8.00am when camping anyway so if I don't bother with a cooked breakfast I can usually get packed away by 10.00am if I stay that last night.
It seems to work for me and having paid for two nights if I can arrive by 1.00pm, spend time that day exploring the area and then most of the following day before packing up and going home I feel I have had my money's worth.
I am getting wise just lately though and have realised that some campsites will allow you to stay late (sometimes up to 5.00pm) for a small extra charge, so I pay for one night and an extension which works out cheaper than paying for two full nights.
