I think you will find that buinesses look at it the other side. The high season is the standard price, discounts are offered for low season when staff aren't paid any less. Although high season is busier usually more staff are employed that need to be paid.

We qualify for concessions and tend not to go away in the high season.  I don't think that concessions should be given in the high season because as Fat Bum says, we can go at other times, whereas those with families are usually tied to high season.

Having said that, for the last five years of my working life as a teacher (age 55-60), I was also tied to holidaying during the high season but as I was working and earning, it didn't matter so much that I paid full price.  However, now I've retired, it would matter!!!

Speaking of schools, I wonder how long it will be before the holiday companies twig that Easter holidays are different in lots of different counties (they seem to cover the period 21st March to 13th April this year) and adjust their prices accordingly

Me too, but as I said earlier in the thread, I was earning money and didn't have children so it wasn't too much of a problem.  Now that I've retired and my income has dropped, I appreciate the concessionary rates.
