With regards to specific things to do whilst you are there; what do you like doing generally?
From Co Galway we took a day trip on the ferry to Inismore (the largest of the Arran Islands in Galway Bay) where we hired bikes and cycled to Dún Aonghasa - a prehistoric fort. There was also a brilliant friendly pub with traditional Irish music. Galway City is very pleasant - track down mcdonaghs for the best fish n chips! There are also some nice beaches in the area (Dog's bay has a lovely arc of white sand and safe swimming). The area of Connemara is very beautiful and unspoilt - worth a visit if you like walking etc.
Dunguaire Castle on the route South from Galway is worth a stop off and if you like seafood I can recommend Moran's Oyster Cottage which is nearby.
Further South in County Clare is Ireland's most visited tourist attraction - the Cliffs of Moher. We were disapointed, although the visitor center is good there is little access to actually walk on the cliffs themselves and it was very commercialised and busy.
The road from there to the Dingle Peninsuar is well worth exploring; The Burren (limestone plateau) and Connor's pass are very picturesque with panormaic views. In Dingle itself you can take a boat trip to see the resident dolphin.
The Ring of Kerry is very beautiful and you can get boat trips to the Skellig Islands. Mannix point campsite is great!
Cork's English Market is worth a visit as it the pretty harbour town of Kinsale.
Hook Head Lighthouse in Co Wexford is is one of the oldest lighthouses in the world, and the oldest operating lighthouse in the British Isles.....
