if your really really desperate to camp, just book and pay for the 3 nights but stay for 2 - its just 1 extra nights payment and you get your camping trip, thats how i would see it.
I agree with dbice...I always book an extra night than we need so I can pack up at a leisurely pace rather than scrabbling about to get off the pitch by 11am

I have found this frustrating as well. We are going down South this sat to pick up our new trailer tent and wanted to sleep it in half way up the road on the sat night (means we can practise putting it up again while we are still fresh!). Well its not a bank holiday weekend in Scotland, I had to phone round 20 sites before I found 1 willing to squeeze us in for 1 night.
Try Downshay Farm. I camped there last Aug Bank Hol. No problem. Here
It's just outside Corfe Castle at Harmans Cross, with views.
It's a turn up and pitch site. Money is collected in the morning.
If they are full, just a bit further up the lane past the CC site is another campsite which had plenty of space last Aug bank hol. Primrose Hill.
Do not go to Toms Field.
Last aug Bank Hol. I walked through the site on the way to the coast path.
6mtr rule does not exist. 6 inch rule might.
They were packed in like sardines with guy ropes over lapping.

You should be able to get into one of these.

I find you have to book ahead these days, was not so 4 of so years ago as we often would decide to go camping the next day. We are going away mid next week and on the 10/09 both have been booked for months.
