We managed to book Beech Croft for mid week Tues Weds Thurs Bank Holiday week the other day. Not sure about weekend availability though.

If price isn't a worry, have a look at Away Resorts Tattershall Lakes. Expensive, but all you need.

Vale of pickering at pickering, no pool but a really nice family site with a good play area, close to Scarborough, Whitby, Filey etc, also similar is the black bull at pickering.
Good luck, persevere and you will get in somewhere. The one and only time we've gone away at bank hol was an August bank hol a few years ago and we'd got a new tent and were desperate to go away (oh usually always works bank hols) I contacted about 20 sites and finally got in at Orchard View somewhere like Sutton St. John Spalding and it was a great little site.

It's a Bank Holiday (i.e. banks are closed) but not a Public Holiday up here. So we've never found a problem getting fitted in north of the Border. Doncaster would be about 3 hours away for the Borders and Dumfries & Galloway.
