Just after you leave the A1 and get on the A66 there is a layby/refreshment area. Sorry I can't give more details - if I remember it's not far past the hotel just as you get on the A66. Somebody from the local area may be able to give more info. That would be a good place to stop - but it does get quite busy.

You can stop off for a couple of hours at the A1 Scotch Corner Moto services - plenty of space for caravans in the bottom parking area.
Alternatively, there is a rest area with toilets and often a food van just as you enter the A66 from Scotch Corner, about 500 yards form the junction. Can get quite busy with wagons pulling in but there is a grassed area you could walk the dog.

Personally I would avoid MOTO at Scotch Corner. There is no designated caravan parking area. We stopped there a couple of years ago and used the area at the bottom as mentioned. We were only stopping for a few minutes while I used the facilities. However a coach came arrived and completely blocked us in. My husband was with the caravan at the time and the coach driver informed him that we could not park there as it's only for coaches, so he would not move his coach and went off into the services.
When we asked management in the service station they said he was correct and we had to use the ordinary car park. This would be very difficult/impossible as it's only normal car sized spaces.
We only managed to get out of the car park when the caravan parked next to us moved and then we had to unhitch and manually move the caravan through a small gap before hitching up again.
Suffice to say we would not return there. I can recommend the lay by though, and if you're there at the right time there's a very nice hot food van.

May be a bit further on than you wanted, but along the A66 are a number of farm shop, cafes etc attached. The car parks are large and we have stopped at all of them at one time or other with no issues.
The layby just off the A1 is large, but usually very busy, and with two dogs of my own, not too keen on stopping there, though it is an option.
Services at Scotch corner are rubbish, but contrarily, if you pass the turn off for the A66 and take the next exit, there is a lorry stop. Not picturesque, but a cheap cuppa and a place to let the dogs stretch their paws!
