Well, I haven't done this trip and there is no way I would contemplate towing that distance with only 1 stop, but we have stayed at a CL called The Lodge, Halmer End near Newcastle Under Lyme which is about half way, fine for a stopover, has facilities, but you would need to buy your fuel at the motorway service station, the nearest garage is about 5 miles away.

We went down from Inverness to Cornwall two years ago but it was a leisurely run over a few days.
Stopped at Carlisle and Sutton Coldfield on the way for a couple of nights at each.
It depends on how much time you have, how much driving you like to do daily, if you have kids etc.
Chester is a good area for a break, especially if you've got youngsters. A day at the zoo will entertain everyone and give you a chance to relax a bit.

2 days should be fine - we drive down to near Exeter in one day. I would have thought a stop between Birmingham and Bristol would be about right, plenty of sites around there...

We have done it a couple of times with a toddler. We like to stop at the ccc certified site at broadway in the Cotswolds. It is a lovely site in a gorgeous area and handy for the motorway.
We normally stay there two nights and have a little explore the day in between.
We have found it breaks the journey really well and you are a bit over half way so less driving to complete the journey and be into a pint of rattler and a pastie.

We have driven down to Cornwall from Perth several times............I would strongly recommend doing it overnight if you can. Motorways are much quieter and when they stop at Exeter the road on to Cornwall (I forget the number) can get unbelievably busy during the day, especially at holiday times.

Whatever border crossing you choose, to get into Cornwall you will cross the Tamar from Gods own country, Devon. Make sure you have a valid passport, I believe you also need 6 months before your expiry date.
It would be very wise to make sure your inoculations are right up to date, and carry your card with you as you will be checked when crossing back into the blessed land, Devon. We don’t want any contagious diseases coming in!
Make sure you visit Bodmin Moor, it is like Dartmoor, but much, much smaller, has no Tor’s, and very little Moor. It is actually a large boggy field!
By way of a little tip. If you fancy winding up the Cornish, which is very easy and a favourite pass time here in Devon, do your cream tea the proper way. Cream first, then jam. 😂😁👍🏴
Have a great time, and luckily for those visiting Cornwall.........You have to go through Devon first. 👍😀
