Last Bank holiday I had the same problem, everywhere I phoned was full. I sent a few e-mail enquiries out too. A couple of days before the weekend I received a reply to an e-mail enquiry saying they had room. I phoned and asked them what had happened as when previously phoned they had been full and this is what they told me
"Before the bank holiday, we always tell people we are full - this is because of the admin involved in taking the bookings and deposits and then if the weather is poor, loads of people cancel. Then just before the weekend, when the forecast is more certain, we start to accept the bookings and reply to any e-mail enquiries. Its not much of a risk as we know we are certain to fill the site regardless so can afford not to take any advance bookings."
I wonder if this is common policy and if so, its worth while sending a few e-mail enquiries out so that they have your details?
