I have tried lots of different dehydrated meals. Most still have hard veg bits even after a long steep. I now avoid them.
This is why I prefer the wayfarer types of wet pouches. They are heavier but don't use up your drinking water. You can boil them in the bag in any old unfiltered water or use a chemical heating bag.
My preferred ones are the military MRE pouches. The UK army ones are very tasty, filling and have a lot of calories.
A good tip is to have a cosy to hold the bag and a long spoon. Eat straight from the bag. No washing up. The cosy keeps it warm and, if using freeze dried, keeps it warm whilst steeping.
Oh yeah, if short on dosh, pot noodles, couscous pots, ramen noodles, quorn are also good and cheap from the poundshop. Strange how a pot noodle reconstitutes but dehydrated expedition food always is like eating bullets. You can buy an optimus cosy that has wee hand warmer bits or make one out of the sleeves of an old soft shell jacket.
You can get army ration packs on ebay and amazon or from mremountain.eu The UK army ones are excellent. Look for 24 hour ORP. The French ones are very tasty but have tins so weigh more. Lithuanian ones are good too. The American ones are expensive. It may seem a lot for a box but you get two meals, sweets, toilet paper, gum, a spork, tons of powdered drinks, chocolate, nutrition bars sugar, creamer, coffee etc. Check out mre Mountain first. mremountain
Wet food packs like wayfarer and mre weigh more but you use less water and they taste so much better.
