... Seriously though, I don't think any car on the market would cope alone, with 2 adults + 3 kids + enough camping gear to make it comfortable/enjoyable/relaxing. You need to put a trailer into the equation, at the very least!

Another vote for the VW Transporter, although we've got a 1991 T25/T3 Multivan. Loads of room and back seat is a rock & roll bed, ideal for when the air bed fails at 3am.
We have a Vauxhall Zafira which is probably in your budget second hand. They have a really good amount of space in the boot (plus the option of two extra seats there), although we have just bought a roof box as we just bought a much bigger tent!

Sorry, only just seen the budget. Maybe look at an old e class estate or mondeo estate? If you want to go people carrier you should be able to pick up a decent galaxy or s max for that.
A double cab pickup with canopy top. We've got an Isuzu dmax, massive amount of space even with the outwell cotton mansion and great visibility for kids. Just packing ours up now for two weeks in Cornwall. Space for more than just the basics so in go the wetsuits for snorkelling, few beach toys, bulky kettle bbq to double as fire pit, couple of extra tubs of food as we do all our own cooking and I'm sure other stuff too.
We got the pickup solely to camp more as the Toyota avensis estate only fit the bare bones in and I didn't want to tow and we have nowhere to store a trailer. We're a one car family and it's been a great buy.
