we do not have EHU and manage fine. We have a selection of torches and lamps, and a Blackcat heater.
We stayed in a motel a few years ago when youngest was a few months old, and I used disposable bottles and cartoned baby milk, maybe that would be an option for you to consider.

Confused by that!.
Mains charger takes 240v through a transformer to a dc voltage (around 5v). A car charger takes the 12v dc and steps it down to the same voltage as the mains charger. A mobile being charged is naff all current and therefore not a problem and will charge Perfectly Well from a 12v supply. - If not they would not sell the 12v cigaret lighter chargers.
If you have concerns for the 12v van battery, plug it into your car. I would not use a 12v to 240v converter for this as you are just going to use more power because of losses in the transformers.
But the advantage for us of using an inverter rather than a 12v car charger for a phone is that most of us have mains chargers anyway and it saves buying 12v charges for the multitude of things that you might need to run and charge.
As you are going to a rally after - and reading some of the posts on here - take a generator for when you are at the rally - i looks like some people do that
I take a generator on rallies, but avoid using it. It is for emergency only. There are usually a few running on rallies in the day and if you need any help, someone will gladly charge your battery. Out of interest, who are you rallying with?

You can buy cold water only travel steriliser bags from Mothercare etc which have the tablets in ready to go all you have to do it fill bag to level shown, add bottles & leave for appropriate time then ready to rinse & use as normal.
If you are worried about power think about a spare leisure battery or solar panel & take plenty of gas to run your fridge & heating with as well as your battery torches etc as mentioned before.
We have two small children & go on a lot of Rallies so have invested in a large (130 watt I think!) solar panel which is permanently fixed on the roof & charges the battery so we can go on longer rallies without worrying, if not you could buy a generator but be careful as most sites have specific times when you can use them & unless you buy a quiet suitcase type Honda or Kippor sort then they can be rather noisy & upset some people.
Don't worry too much as Rally goers are pretty friendly and if you struggle I'm sure you will get plenty of assistance.

Having read one or two posts in the caravanning section, I suspect there are one or two people here I would not want to meet in a dark alley. But I'm sure the majority are very nice
I got a little wind up torch that also charges my phone! About £8 from a camping shop. Lovely little gadget, it does in an emergency but takes a long while to charge if you let your phone go really flat. Great as a torch and OK for a standby phone charger. Got a wind up light from Woolworths as well. Wind up things are great, you charge them by hand, less to plug in anyway!
