Depends on age of fridge & weather, ie ambient temp. A modern one should get fairly cold on a long trip, they can actually freeze if you're driving in winter. Bear in in mind the power is cut when you turn off engine, so switch to gas if you stop for an hr, if you want it to keep cooling.
It won't help if you put uncooled cans of drink in just before you leave for example. The best plan is to precool fridge overnight before you go, either on ehu or gas, then put your cold stuff in from your kitchen fridge.
