Cadac say to put water into the fat tray before using it, and it certainly does improve matters.

I found it also help keep food from going too dry as you get a bit of steaming too.

Using it as a bbq you only need it on minimum to cook on. Higher and you'll burn your food. Also use the lid as I find it helps cooking.

Some great tips coming in now - I'm starting to feel a little happier about my purchase and ready to giv it another go - obviously had the gas too high and will try the tip of putting a little water in the fat pan. I must admit I haven't tried any of the other bits - the griddle sounds a good bet!
