The strainer is useful but also a compromise because its multi purpose. I've used it for draining the water after boiling some spuds to make into mash and that works well, used it a lot as a lid and have used it once or twice for cutting on, but I prefer holding and cutting whatever.
When I use it as a lid its on the top of the two pots stacked up with food in because if you use as a lid on one pot whilst cooking, the flames can melt the edges of the lid, so I just use the 2nd pot as the lid now in that arrangement.
On the simmer ring, I just use the handle, knife or fork for whipping it out, if I cant adjust it in situ. You tend to get a feel for what it needs to be adjusted too.
I've just bought 5l of isopropyl alcohol (rubbing alcohol) to try in the burner because its <9% distilled water and added water is a frequent suggestion made when using meths to get a better flame.
So hopefully I can see if its less sooty than meths and see how it burns/cooks compared to meths pretty soon.
Plus it can also double up as a foot rub/antiseptic on plentiful supply.

The US mil suggest using this type of alcohol for keeping feet clean/fungal free, handy after a days hike and wild camp, the UK marines suggest using surgical spirit for for the feet but one of the ingredients, Castor Oil, has the same aroma as the dried perineal glands of a Beaver!
