You could improvise something. I was thinking 2 pieces of hard plastic slightly wider than the sim. Attach the plates top and middle to the sim, possibly with elastic. Then have webbing straps coming from the top corner and bottom corner, if you prop the sim up and attach theses straps together with clips, you could just unclip them when you want to lie flat.

Well, how exciting! I had never heard of a Sim Chair Kit, but based on that a bit of googling reveals that Thermarest and Vango both do webbing strap-based kits for turning a SIM into a chair, that, I think could be used to leave the bottom part of the mat lying flat and create a back rest.
The Ex-ped version looks good if it will accommodate my Outwell 7.5Cm SIM.
