We were in the same situation as you and have just bought the Igloo Maxcold 70 Roller. Used it on a 3 night trip last weekend and were pleased with it. As it only arrived the afternoon before we went we didn't have time to cool it for 48 hours as advise from various threads on here have suggested but it was still cold by the end of the trip.
We made some giant icecubes in tubs and left these to melt slowly over the weekend, not removing the water which kept very cold. I also added some frozen sausages and fish to thaw slowly. We stood milk, juice, Baileys and beer in the cold water, along with a tub containing butter and cheese to keep these dry.
We then added 3 extra giant ice cubes, still in the tubs on the top. But forgot to add the lids ... DOH! We also forgot to take our spare tubs to keep other things we bought dry ... DOH! DOH!!. so we had to play a bit of a balancing game, and we did remove the excess water from the tubs at the top.
Apart from this, lessons learnt, we thought it was an excellent piece of kit and used properly I'm sure it will fulfill it's 5-day promise.
