I brown meat before cooking .. with pans open and up quite high, turning very couple if mins ... when all sides done .. lock pans .. reduce heat and leave to do it's own thing (for beef I turn down real real low and cook for couple of hours)
If cooking potatoes with meat .. for last 30/40mins of cooking .. I take meat out .. turn up heat to high .. put veg in and watch and turn to brown all sides .. pop meat back in and turn heat down
I only every use about dessert spoonful of oil (just enough to cover the pan base)
Chips in a tent --- Oil the pan ... cut potaoes into chips ... place in heated (hot) ... some chips will brown straight away ... shuffle, turn for a 3 to 5 mins ... lock the pans and shuffle and flip on med heat .. 15 /20 mins Camping chips
Sausage and 'cube chips' -------- place sausage's in pan on med heat (might need a smidge of oil) ... then cut potaoes into cubes (I keep skin on, saves time) .... give sausages shuffle, .... throw in the potatoes ... keep eye for couple mins shuffleing to mix sausages and pots ... turn heat to med to low and shuffle and peek now and again ... 20 mins sausage and chips ... oops don't forget the milk pan for the bake beans
