When I had a caravan I kept everything in it whilst in storage but do remove all food and perishables otherwise the mice will smell it and damage the van getting in. Empty all water tanks too. I also left a bowl of salt at each end of the caravan which attracts moisture and helps to prevent damp and condensation. It also helps to keep the air smelling fresh. I also left citronella blocks in the caravan which helps to keep flies and other insects out.
It would pay you to visit the van once a week if you can to open up all the windows and give it a good airing and to check that no destructive creatures have managed to get in. It wouldn't harm during your visit to stick the gas on for a short while (fridge, heater and cooker) which helps keep it all in good working order.
