If the flat side of the double sided plate is used, then the fat stays on the plate.
If the rippled side of the plate is used, then the fat will drip into the rim of the main part of the Safari Chef that goes on top of the burner.
If there is a lot of fat when using the flat side of the plate, then it can over-fill into the rim too.
I tend to clean only the double sided plate, and leave the main part till it is time to pack up and go.
BTW, I don't use my Safari Chef HP anymore, as I prefer my Coleman Dual Fuel two burner stove instead.
