Things we have done:
microfibre towels - also double up as window shades if it is very hot
got rid of air mattresses and replaced with SIMs
vacuum bags
hunted around for lightweight, small chairs
minimised the amount of clothing and shoes
but most important of all is packing every millimetre of space in the car with something. There is a well in the roof-box under the table - blankets squeeze in there. There is a small gap between the back light and the side wall of the boot - in goes the kettle and the gaz cylinder. Never leave a space unused - that way you can do what we did and bring home 2 bodybords and some booze.

But seriously before we got the van space was at a premium and everything had to do two jobs if possible. Our best space saver was ditching the airbeds for campbeds as they fitted on the floor in the back seat or tucked into spaces that we had left in the boot

unlike the previous sarcy posts regarding their spouses, real or inflatable, I would have to say my wife is my best space saving item. Basically a one tool does everything piece of equipment.
