We use therm-a-rest mattresses. The 2 we are using are over 10 years old and are as good as when we bought them. Yes they are expensive but well worth the money
Thicker the better if my opinion. Obviously this makes the, bulkier even when deflated but you do. It need to take all that extra stuff go keep you warm underneath sleep bag is fine or a sheet if you use duvets.
We use Nomad extra wide 10cm Sims from Obelink. Very comfy, nit the cheapest but top quality and not the most expensive either.

I'd go for the best you can afford. 10cm thick are better for adults, though kids are okay in 3cm or 5cm ones. DH has an XL 10cm one, and it is far nicer than my standard 10cm one.
if im solo camping in a small tent or at Silverstone for motogp I use a hi gear 4 leg camp bed with a vango trek long 7cm sim on top for a bit more comfort
saying that I decided to try a coleman comfort double airbed for me and the wife ..however I went on my own and used it.. the following morning it was nearly flat
Just posted on another thread, came across a 7.5cm Sprayway Mat for £33 delivered. Seemed pretty reasonable (and I've been comfortable on a 2.5cm SIM) so hopefully it'll do me fine.
I love my Therm-a-rest Luxury Map XL so much that I bought another this year to make into a double with mine for camping with my gentleman friend.

We bought some expensive thermarest dreamtime XL which have been worth the money. So comfortable they can be used as spare beds when visiting friends/unexpected guests. Someone on here recommended them a few years ago.
