Those who use a tarp to set up a camp kitchen outside, do you just leave the tarp up the whole time? Just thinking if wind picked up?

Technically, they should come down in windy conditions. The problem with that, of course, is that there is no defined limit... and no anemometer on most sites!!
That just leaves "intuition"!
On our two windiest camps so far, (one of which damaged my tent on strike down), quite by chance, we didn't set the tarp up anyway, so it wasn't relevant.
For all other occasions, we have, erm... got away with it, I guess! Not had to take it down so far, touch wood.
I do swear by good solid pegs (Delta's, more often than not), sturdy poles, and long, well spread guys though, to be fair!
On the spot decisions is all we can do, I guess!

...Or consider these...
http://Telescopic poles from 1.14m to 2.13m
Cheaper than the Vango, with the added flexibility of the height range. No idea how they compare, quality/sturdiness-wise, but seem solid enough to me, and they haven't let me down, despite using all year round for the last two years. They're black though, not the silver they appear to be in the pic.
Highly recommended.
