With more and more superb portable cooking equipment being ever more readily available I'm really interested in what people are cooking on their grills when out and about.

Has anyone tried smoking meats?
What's the best equipment for cooking a perfect steak?
What's the most unusual recipe you have?

I'll start things off with this great bruschetta recipe I put together, please let me know of your experiences.

      I have not tried smoking meat, therefore, I cannot comment.

      As for cooking a perfect steak, I use a non-stick frying pan on a gas hob at home. On a camp site, I use a Coleman Dual Fuel 2-burner stove.

      As for unusual recipes, I can't think of any, however, my "normal" recipes may not be conventional to start with.

      Have used my smoker for salmon, brisket, pork and even done a ham on Christmas Day.

      My perfect steak can be achieved by buying a good piece of meat from a butcher, I know.
      I usually go for Rib-eye.
      Non stick pan hot and smoking, preferably cooked outside because it will stink the place out.
      About 4 mins each side will give it the chargrill on the outside and still be rare on the inside. Vary timings according on thickness.
      Salad, new potatoes or even spaghetti and pesto.

      "Where's that pan, aw, drat the shops are shut" !

      Rump or rib-eye for me, and I tried cooking a steak on my charcoal Weber Go Anywhere BBQ, and it is not something I would recommend.

      Perhaps I left it too late for the coal to achieve the so-called white ash phase before I started to cook the steak, as it was not hot enough to sear the outside quick enough while leaving the centre rare (I like mine rare).

      It turned out to be medium with just a hint of pink, and it was chewy. Never again.

      I have smoked many kinds of meat on my Pro Q excel 20 smoker.
      Cooking temperature and meat temperature controlled via iDevices probes in the smoker and meat and monitored via the iphone.
      As for the recipe - good meat needs very little, but some swear by brining.
      Home cured / smoked bacon takes some beating - cut as thick as you want.
      Temperature is the enemy of cold smoking (best done over night in the winter)

      Low and slow cooking is best done for big slabs of meat with lots of connective tissue which benefit from the low slow cook.
      Best way to cook Steak = Sous Vide (temperature controlled water bath)

      My favourite recipe at the moment on the Cobb (ditched the BBQ) is the Hairy Bikers pulled pork I admit to doing part of it in the kitchen oven and smoking/finishing off outside

      I have a new (video) recipe, this one is specific to a grill i have (THÜROS miniCater), but I hope you like it - it can be done just as easily on the grill/hob.

      Can't beat a rib-eye steak, never smoked meat, but have mastered a good chicken tikka on the cobb.

      Fresh sardines.

      Only way to cook them is on a griddle outdoors cos they stink the house out otherwise even with the hood going flat out.

      Gut then, trim the fins with scissors and cook on a very hot griddle about 5 mins a side.

      Sprinkle with black pepper and lime juice wrap in foil ten minutes and eat them with tour fingers with some good rough bread and my favourite tomato salad (I'll post the receipt for that if anyone's interested).
