Personally, I wouldn't get too hung up with the  "..we've paid for it, so we must use it.."  lark .

We did something similar a few years back(with a MH). Firstly we bought a single hob..later to be replaced by a double s/steel(Swan?)unit.

They worked okay BUT, for us, they  didn't make "camping" any easier.

Ours took far  longer to heat up(and longer to cool down)than the gas.Ours also threw out a lot  of "downwards" heat.(We had to sit them on silicon mats and a thick chopping board ) and if on a low ampage (possibly "iffy?) supply we'd be forever "juggling" with which appliances to have switched on at any one time, so as to avoid tripping the supply (not always easy to reset on some sites)

So generally, for us, they could be a bit of a faff and were just more tat to have to pack/unpack/store/lug about.

(If you really feel that you want to make use of the ehu, maybe just use it for a kettle and maybe a toaster?...)
