Hi Dopey,
I very recently bought a Safari Chef 2 from Go Outdoors and it's a great bit of kit and much improved on the original - itself very good.
First thing, there are two versions, low and high pressure, the difference being that the hp version has canisters that screw directly into the Safari Chef, while the lp version connects cannisters via a hose.
Reviews point to the hp version being less good and less hot than the lp (which I have).
With the lp Safari Chef you have a choice of connectors, either Campingaz or EN417. neither of these come with the kit so you need to buy them separately.
Campingaz regulators connect only to their own canisters or gas bottles, which are generally more expensive than the alternatives.
EN417 is a standard connection which means you can buy brands such as Coleman, or many other brands on, say, Ebay for less than a fiver a can as opposed to £8 or so for a large Campingaz. Go Outdoors though sells only Campingaz, so Ebay or a good camping store is the answer.
I had bought a bunch of Parasene canisters for a weed burner that turned out to be rubbish. They're EN417 and work fine with the Cadac, so I'm set with gas for ages.
