Hi juless

We use two single Outwell self infalting mats, but hold them together with two 'luggage' type straps (like thin seat belt material). They were a couple of pounds each from local camping shop.
That actually works really well, you can't feel the join in the middle at all (the sleeping bag material fills the small dip), and they are also easy to fold away since they are both single width.

I got this tip from the Therm-a-rest web site, which is what they recommend to make a double.

Good luck - the Outwells are really comfy!

I noticed that multimat do some that velcro together, they may also do doubles.  They have a website. I have not used them so cannot comment on quality.
