Last year we were already in France before the Whitsun weekend and wanted to move sites on the Friday. Just in case, I rang 3 sites we'd earmarked, and all were full! This was in the Loire area. We did manage to get in the 4th no problem though. Depends where you're going, if you have a site in mind, and want to stay for the weekend or longer, it wouldn't do any harm to check beforehand. Also, if you're after an overnighter near the port or tunnel, it may still be an idea to check, as that's also the weekend before the UK Bank Holiday at the end of May.
Edited to say that in over 30 years of going to France we've never booked a site, apart from a couple of times, when we've booked a site close to the tunnel as it was August BH when we arrived. But last year other sites we were on before that weekend seemed busier than normal, hence our decision to check sites beforehand, which turned out to be a good thing. Better than driving there and meeting the "Complet" sign at the entrance and having to turn back!
