It’s easy enough to use a campsite for an overnight stop with a caravan, but if you really prefer a B&B I would use Booking.com - you will need to select one with big enough parking space.
Which route south? Usually it would depend upon the port you're arriving at. A very different route from Rotterdam to Montpellier, compared to Roscoff to Montpellier.
Don't forget to leave a review of the French and other European campsites you have visited!

In that case your halfway point is St Amand Montrond - there is a perfectly adequate and fairly ordinary campsite there , but suitable for an overnight stop - unless you really do prefer to find a B&B.
There’s a little cluster of campsites where you can just drop your steadies for a night. Apart from St Amand Montron, there’s Bourges and Salbris, which I’ve used and can recommend; and Nouan le Fuzelier, which I’ve seen others recommend. There’s also Vierzon, which wasn’t as nice, but if you’re looking for accommodation rather than a pitch, is well supplied with cheap chain hotels just off the autoroute (including the B&B chain).
I’m intrigued by your request however. Is there a specific reason to look for private accommodation, rather than using the caravan? I see you’re tenters in your profile, are you hiring a van down south?
I think it would be impractical to use a B&B with a caravan in tow due to parking restrictions. Best is to find a campsite for an overnight stay.
As it is a very long tow from Dieppe to Montpellier probably best to do it over 3 days or 2 nights. At least that way to arrive refreshed. After all you are on holiday and no rush to do anything!

The OP says “ Travelling down to Montpellier in summer with caravan….”. Maybe their profile is out of date.
