Down to the Languedoc from Calais, your best option for a 'reduced' tolls route is using the A16 to Abbeville, A28 towards Rouen, skirting Rouen and then taking the N154 down to Chartres, or even as far as Vierzon, then take the free A20 down to Brive, cross country from Brive to Rodez, on to Severac le Chateau and down to Beziers on the Med. (email me on valdaathome at gmail.com) if you want a PDF version of this route with some overnight site suggestions.
If you take the completely toll-free option it will cost you nothing, you can pay three euros to avoid Orleans, and then choose to cross the Millau viaduct and pay around 10 euros (or stay in Millau itself as an overnight stop, visit the viaduct viewing point, and use the money towards an overnight site. Or you can hop on and off the autoroute if you feel you're not getting there quickly enough.
I would seriously think about the last two weeks in August, that way sites are not going to be as full and you're more likely to be able to find somewhere accessible to a beach.
You might want to look at Champs Blancs in Agde - we've stayed there lots of times in the past (though not in the last three or four years). We did book a pitch for our son and his girlfriend to use our caravan but they weren't able to take up the booking. so we had to cancel. After the 25th August the site will only cost you 15 euros per night (using an ACSI Card - see www.campingcard.co.uk) for pitch, two adults, car and tent. You could combine a week at 'normal prices' and then a week saving with the ACSI Card (email them - they're very helpful|). Then you pay the 'normal' site supplements for your 9 and 17 year olds. I can't find this information from the website, but it's usually around 7 euros for an adult and perhaps 5 for a child.
It's walking distance to Agde, just across the road from the supermarket, and has a fantastic pool. There were some complaints of noise from the supermarket car park but we've heard that these have been addressed.
In peak periods then I'll leave the suggestions to others, as they'll have more ideas which sites might still have some availability.
