If you could narrow down the area a bit it might help with the choice. We did Beziers to Nimes last year. We were intending to drive further North but due to weight of traffic decided to stop overnight. Have to say the drive took us far longer than we expected.

Ibis was 52 euros for one night, and 69 for the other - double rooms, not per person. Breakfast is extra, (8 euros) as it is in most hotels in France. It's not particularly nicely situated, being in the Centre Commercial with all the other hotel chains, but it is quiet, despite being near the Nimes bypass. It has an outdoor swimming pool and paddling pool. We did stay at the Thalassa Mercure at Port Camargue on our last night (about 40 minutes from the airport at Nimes - which is to the south of the city) - and that was lovely. We had rooms overlooking the sea, with a balcony, and it was warm enough to sit outside and watch the sun set.
I agree with Johnny about the Gites de France B and B idea, though, - we've done this too, and found a really nice B and B to the north of Nimes, at Les Mages - but it's a little too out of your way to consider as an airport stopover.
