We have used many aires all over France. There are somethings you need to look at. Firstly finding them. There are some good books around (aires de camping car and all the aires in english). The other method is to use tourist offices in the location you are in for advice on places to stay.
As for what you need, well you will need a euro plug for your hook up, a polarity tester can be useful. As for water? no diffenrent to anywhere else. What you will need is either tokens or euro coins. Emptiing your waste is no different. If staying on Aires for less than a couple of nights we rarely use hook up especially in summer. Some aiers are better than others. If down on the south coast you may find some aires busy and not as safe as those in smaller towns. So make sure you suss the area out first. If unsure simply move on.
Its a very cheap way to spend your nights, but also so are muninciple campsites. These are council run and maintained by the local community,. Very cheap with wuite good facilities.
