John - Lots of schools seem to be looking at the option of two weeks at Spring Bank (Whit) - it was always our favourite holiday time when my sons were very small, but as they got bigger they reduced the holiday to one week.
There are loads of lovely sites in easy distance of Nimes and Carcassone - but are you looking for 'ready-erected' tents, or taking a lightweight tent plus your own equipment? If the latter, then you probably want a site with really good facilities, and perhaps a take-away - and restaurant within walking distance (or do you want to cook on a little Trangia or similar?). I'm thinking in terms of the really low luggage allocation that you get these days on Ryanair - anything more than two pairs of pants and a toothbrush and you could stay at the Hilton with the extra baggage supplements!
Also are you looking at inland sites, or Mediterranean sites? Again loads to choose from in this area - of all sizes and types, but what do you prefer? There are lovely sites in the Camargue, in the Pont du Gard area, Sommieres, and around Carcassone, and the Ardeche is only an hour or so north of Nimes - and we've stayed in quite a few over the years. Do you want a pool - or would you be happy with lake or riverside, or neither?
Just a bit more detail on what you want and someone will come up with your ideal solution!

Yes the extended spring hols give a nice alternative to the usual peak summer time. This would be a first for us. Theres a need to get further south to get the sun this time of year, hence Ryanair.
We'll be looking for on site mobile homes/tents as taking the quantity of camping stuff we'd use would be impossible. As you say even taking two bags will bring a surcharge from Ryanair but we'll just have to take it. We hope to hire a car so have quite a bit of flexibility in terms of access.
I find it quite difficult describing what we want mainly becasue its the feel of a place which we tend to go for. Of course there are some practical things which affect this, so we like decent pitch sizes, based on grass not hardstanding. Nothing too basic, nicely laid out but dont need the chelsea flower show either. We'd avoid large all singing/dancing sites (usually found on the coast)but would have no problem with smaller coastal ones. likewise not bothered about a pool, but wouldnt rule a site out just because it had one. Inland sites would be great too. A lake or riverside would be lovely. Ive located one within walking distance of Sommieres which looks good (camping Du Massereau)
We like to look around towns, we eat out quite a bit, perhaps do a bit of canoeing, maybe the odd game of boules/table tennis, bbq'd seafood is a fave on-site activity. As I said having a town within walking distance might be nice.

Camping Les Chadenedes, as mentioned by Liz in another posting, looks lovely - is well situated in the southern part of the Ardeche, in easy reach of Vallon and the main Ardeche river, the Chassezac river, Ruoms and La Beaume - all of which offer great opportunities for messing about in rivers. I haven't actually stayed there, but where we usually stay is nearby across the bridge at Grospierre.!
Chadenedes offer a whole range of accommodation - mobile homes and a selection of Gites which looks lovely, at a reasonable cost, and it looks a great place for a quiet holiday - with availability still in May, according to their website. May is also a lovely time to be in the Ardeche.
Huw (TethersEnd) is going to Camping Le Provencal, which also offers accommodation, as do many other sites in/around Vallon - but are Vallon itself sites tend to be the bigger type. We've stayed at L'Ardechois which is another big site, and visited Le Provencal and Le Mondial, as well as Camping International at the other side of the river. We've also stayed at Bastide en Ardeche, which in May will be a quiet site with a lovely pool, also offering accommodation of various sorts - but a bigger site in terms of pitch numbers than Chadenedes.
Who know, we may change the habits of a lifetime, and not use our Camping Cheques to stay at somewhere like this!
