I don't know about the North west coast, because in my imagination it will be cold at Easter, but we've been to the Mediterranean at Easter three or four times now, and had lovely weather each time.
We've chosen bigger sites recently, particularly Cambrils Park, because it takes Camping Cheques, at a very reasonable £13.40 per night for pitch, electricity, caravan, two adults, and two children under 12. It's a big site, but absolutely wonderful, with two pools - one especially for children, with elephant slides, dragons, and squirty fountains. Pitches are generous for Spain, and well-boundaried between pitches. We've also stayed at Internacional de Calonge near Playa d'Aro - another site we liked very much, particularly the nearby beaches.
Cambrils Park has everything you want on a site, and whereas in high season it would be a bit 'full-on' at Easter it's just a high quality site, not too busy, with excellent toilet blocks (each with a 'resident' cleaning team who are always present cleaning somewhere in the block), restaurant, bar, take-away, sports field, supermarket - both on site, and a short walk away, near to the beach which is within walking distance, the port of Cambrils is just down the road, and with Port Aventura just up the road. There are lovely mountains (smallish but spectacular) just inland, and in Spring the most amazing displays of wild flowers. You're a trip away from the Ebro delta, with the most fantastic migrating birds at Easter time, and the Easter festivities in Tarragona are second to none. True it's a fair trip from the ports you're thinking of, but much less of a journey than doing the trip up and down through France, as we do - all within a two week plus an extra weekend holiday.
