Not been up the Odet by boat, but the area is outstanding. If you are happy with a bit of sea crossing, the absolute must is a trip to the Isles of Glenan, which is a lagoon about 15 miles off shore. Boats go from Benodet, with a variable stay on shore, and can be included with a glass bottom boat experience. You can book your trip a few days in advance.
