viz jacket - legal and sensible - which do you prefer? legally knocked over or sensible and seen and avoided by others - your choice nb spain has legal requirement for 1 per person - I always carry spares - they are inexpensive and take up very little room - hopefully you never need to use them
documents for car - take the lot, you never know when they might be needed - if you do need them, they are available if not you have won the game again sensibility wins the day. for the sake of a bit of space and organisation at the start of the hol, it is no big deal
insurance - I have know people who never bother with it. Fine. But what if is important. I have been going to France since 1980 - the vast majority of the time I have not needed to use the insurance, but when I needed it it was invaluable.
I learnt a lesson on my first trip abroad - no you won't need a spare caravan tyre my friend told me after buying the van from him - coming back from Luxembourg I had a blow out - fortunately there was a garage round the corner ready to rip me off. I became sensible after that.
