You must try Sebastian Foulks Birdsong, Charlotte Gray and perhaps the Girl at the Lion d'Or too.
I have only read the first two, but they are fantastic novels set in France during WW1 and 2.
Labyrinthe as above was also one of those books you don't want to end, suspenseful and so well written; it switches between medieval and contemporary France.
