Bit of a funny route, your direct non toll motorway route via Luxembourg for cheap fuel would be Calais, Lille, Namur, Luxembourg, Trier, Kaiserslautern, Karlsruhe, Munich. I guess google has never driven down there in a truck.
Going thru France will cost, car only £31 in tolls one way.

I would go that way or
Luxembourg - Saarlois - Pirmasens - Karlsruhe, saves 150+ kms.

Thanks for that So any suggestions for a nice stop off point?
Sorry we did ignore your main question a bit, didn't we :)
viaMichelin is showing 10.25hrs and 1119km (700mls) for that route. For me, that's way too much to be doing in 2 days, I tend to stop after 300mls at the absolute max. For me, the problem with attempting nearly 400 mls in a day is the potential for huge delays at roadworks, etc, which can see you driving late while exhausted trying to reach your stopover point, then having to start again the next day.
If you're going to attempt that much mileage each day, then tbh it doesn't really matter where you stay, as you'll just be using it as a sleeping point. It really depends when your ferry arrives and how you want to split the mileage up, but somewhere around Strasbourg / Karlsruhe would seem logical ?
Personally I would go for 2 stops around Chalons and Stuttgart.
