If Eurotunnel (or any other carrier) want to check the weight of the gas, they can easily check that the tare weight (marked on the cylinder or its collar) plus the stated weight of gas, add up to the total actual weight.
Never had a problem on Eurotunnel. Last year we went through a manned check in on the way home because the auto ones weren't working, she asked if we had gas - Yes and if it was switched off - Yes. bye. Job done.
We've never had to prove that the bottle was only filled to 80% (wouldn't know how to!). They just check that it is turned off. As Hacksaw Bob said in his post, the bottles are only filled to 80% when you buy a new one.

You don't have to "prove" anything, no need to buy a gauge. As has been said, gas bottles are never filled beyond 80% anyway when full.
After check-in, someone checks that the bottle is turned off, they then write that on your paper hanger (which you get on check-in and which you have to hang from your rear view mirror) so that it is clear to see it has been checked. And that is it, we've travelled on the tunnel for quite a few years now and never been asked to "prove" anything, so don't worry.
We have never had a problem, we just declare that we have two campingaz 907 cylinders and that they are disconnected. We were asked once if they could see them and they changed their mind when I told them I'd have to unpack the trailer to get into the side lockers.
We have also been pulled over for the full swab chemical test on all the door handles, steering wheel and panels. It's never been a problem and normally only takes about 10 minutes.

Just have your cylinder handy in your trailer/boot/caravan or whatever so they can check its turned off, which they always have done with me.
I've also had the swabs done, makes you feel like a terrorist!! I think they're checking for explosives residue, something worth thinking about if you have been handling fireworks!!!
