Gorges du Tarn/Jonte/Dourbie areas - fabulous natural scenery, lovely rivers, and more mediaeval villages than you could possibly visit! Then there's the Knights Templar villages of La Couvertoirade, St Eulalie De Cernon, Viala pas du Jaur, and St Jean de Alcas, plus the (being restored but fascinating) La Cavalerie. There are wild flowers, wild places, lots of birds of prey, including vultures which fly over the campsites in the region, old ruined chateaux such as Peyrelade. Then you've all the natural scenery, which is fantastic and quite different to that around the Aude/Cathar area (we have a friend with a house between Limoux and Peyrepertuse).
There's a place on the Corniche with dinosour footprints - and my boys loved it there when they were small. There are lots of caves and grottoes, ruins, and wild rocky places like Montpellier La Vieux - which my sons also loved when they were small.
For us, we like the Tarn/Jonte/Dourbie area better than the Dordogne - more rugged, wilder, and also less touristy - and there are some fabulous campsites - many with access to the rivers for swimming or just paddling. The people are friendly, and you're only an hour and a bit away from the Mediterranean if you need a fix of seaside.
