At the cheaper end we've stayed in the Premiere Classe opposite the railway station in Calais - and that was fine - good clean room - comfortable bed - quiet, but the breakfast was one of the most disappointing we've ever had in France.
We've also stayed at Maison des Sources, near Cassel (which is a charming little town). That was excellent - and you can have breakfast either delivered to the house, or in the Chatellerie de Schoebeque (the main hotel) - which is very luxurious, on a hillside, with great views from the conservatory over the plain of Picardie. Some guests are even lucky enough to be upgraded if the Chatellerie is not full!
If you want somewhere a bit 'different' then Chambres d'Hote du Parc in Calais is excellent - very eclectic and French. It's not particularly cheap, but has lovely rooms, and the breakfast is superb. You can get bargains depending on the date of your travel. It's near the Town Hall in Calais with a lovely view of the tower in the evening, and there are loads of good restaurants nearby - Le Vieux Fourneau is one that we've been to several times and had their 'Menu' - three excellent courses.
We always use Booking.com for find hotels - they now offer Bed and Breakfast places as well as larger hotels.
