Visiting France in May for the first time with a VW. Is it legal to park up overnight in car parks or lay bys if we fail to find a site? We don't want to be rudely awakened by the gendarmes at 2am!

YES!!!

This is one huge difference from the UK. Though our off-site overnighters have mainly been motorway services, but we have stayed in lay bys, and supermarkets are another place it is possible to stay. If you are stuck, parking up somewhere at dusk and leaving early is no problem.
There are the campervan aires, but if you need facilities they are not guaranteed.

Gendarmes are unlikely to be an issue. If its a VW camper most every town/village offers free camper parking in designated places with varying amounts of facilities. Not caravans unfortunately. If you park in these places it will be with company.

As Crach says most communes have a van aire and vans are tolerated in many car parks just for the overnight - although some have very strict exclusion rules so check the notice boards!  Quite often you find that although camps are full or closed, they have an area outside the site where you can park up ...
