I always explain to my kids that having a caravan means they get to go away alot more than their friends, however, it also means that they can't keep asking for things everytime we go away so they are quite good now and rarely ask for anything. I think you have to talk to children sometimes and explain things. They have a small allowance and once it's gone that's it!
We do bits of lots of things on here already. Dividing up and keeping separate pots works. We have separate bank accounts, so my wife buys all the supermarket food. I take a lot of cash and budget around 50 euros a day for activities and spending money. We like boat trips, castles, caves, aquarium visits, railway trips and occasional theme parks, so some of these are quite expensive. Balancing a big splurge with a couple of quiet days in the woods or at the beach helps.
Then its a balancing act. If either of us are feeling flush we'll have a meal or something extra as a treat.
There are some things that are non-negotiable, just like at home everyone has different priorities- one man's luxury is anothers necessity. Absolutely essential for me is fresh croissants and baguettes every morning. It's the main reason I go. We usually make sandwiches for lunch with the baguettes, wrap them in tinfoil and take them with us for a picnic.
